Farm Newsletter – April 28th 2020

Happy Tuesday!

We’ve got a fresh batch of our pasture raised chicken in the freezer and ready to be ordered for this Saturday’s Waverider delivery. While you do not have to place a preorder, (you can come out and shop from our freezers on Saturday) it’s best to place a preorder if you know you want chicken as it has been selling out fast! We are processing a new batch about once a week, so if you miss getting chicken this week, no worries, more is coming!

Eggs have been rather scarce here lately. The older hens are winding down in production and the newer hens are just ramping up so it will even out soon with more eggs for everyone. When Vivian and I went out to collect eggs the other day we found a couple hidden stashes in the rye grass where the hens had been hiding them away! 😀 We collected those for our own use and made a quiche out of them!

Our freezers are also well stocked with plenty of our delicious pasture raised Pork! Sausages, chops, ribs, roasts and more!  Check out our price and product link below for a full listing of available items.

April 23rd – News from the Farm:

Happy Thursday!

**Please read through the newsletter carefully for how to obtain our products this weekend**

Good afternoon y’all! So, the good news is our pasture raised CHICKEN is back in stock as well as a full selection of our delicious pork sausage, boneless chops, bone in chops, ribs and more. We also have several NEW items in the pork department: Country Style Ribs and Pork Steaks! Give them a try and let us know what you think!

The other news is that we haven’t yet heard a final word from Dare County on an entry permit yet. We’ve been in touch since first thing Monday morning, providing documentation, etc.,  but a girl from the office said that they are swamped with emails and that it may take a few days to get our forms processed.

HOWEVER, we were able to obtain an exemption form from the State Commissioner, Steve Troxler, stating that we are an essential business which we’re hoping can get us through. (If our Dare County pass doesn’t go through in time) We have a Plan A and a Plan B. 

Plan A is what were shooting for as long as we can make it through the check point. Plan B will only be enacted if we are unable to get through the check point. We will update thru social media. Please do not follow Plan B unless you are notified either by phone or social media. Please call me if you have any doubts or questions: Morgan: 252-394-1314.

Plan A). We’re planning to deliver to the parking lot of Waveriders this Saturday from 10am-11am. Preorders and Market trailer for those wishing to shop from our freezers.

Plan B). 10-11:30am. Meet at 264 heading towards Engelhardt. (First left after you pass the checkpoint driving away from the Outer Banks.) It is very IMPORTANT that you give us your phone number if you place a preorder so that we can call you in the event that Plan B has to be enacted. Those who are planning to shop from our freezers at Waveriders will need to rely on checking our social media accounts (Facebook and Instagram) to be updated if we are unable to obtain access through the checkpoint.

The Asparagus was hit hard by the frost this week and is still in recovery mode so we will have little, if any, available for this weekend.

April 2nd News From The Farm

Happy Thursday!

Yesterday, Paul worked on bedding up the hens winter area in preparation for this year’s garden. The hens are loving scratching through the upturned dirt for bugs and other chicken delicacies before we move them to their new spring pasture.

Aspargus is coming along nicely this week and we will be taking preorders for it along with our meats and eggs. A preorder is not necessary,  you can come out and shop from our freezers at the pick up spot, but some folks like to preorder as we sell out of certain hot items fast, like eggs and asparagus. 😀

We’re planning to deliver to Waveriders again this Saturday from 10-11am. Same plan as last Saturday; WE WILL HAVE OUR FULL MARKET TRAILER WITH US. You can preorder order or simply come out and shop from our freezers. Whichever is easier for you.

October 22nd – News from the Farm:

Happy Tuesday!

This past week we celebrated Jonathan’s 2nd birthday. My, how time has flown since we first held that one-ounce-shy-of-10lbs baby boy. He is a mischievous, smart, sweet and fun-loving little man. His two favorite things right now are playing outside and looking at/having books read to him.

We had a bunch of family over for his birthday and so I needed something easy to feed a crowd with. My go-to for large gatherings is to crockpot a Heavenly Portion ham or two. So easy. Put them in the crockpot overnight and they’re falling off the bone by the next day at lunch time. So yummy! Plus you have lots of nice broth to cook your greens or beans in. A win-win.

Remember last week I told you that we planted some collards? Well, this past Saturday, several of the hens decided to squeeze out of their pasture run and start eating the collards! I couldn’t have that so I went out to see if I could round them up and escort them back to their own perfectly good run (apparently the grass is greener on the other side for chickens too). Well, if you’ve ever tried to catch chickens on your own without another person to help you corner them, (Paul was away at the time) you’ll know how tricky it can be! Fortunately, Biscuit, our farm dog saw what I was trying to do and jumped in to help. I was really impressed by how well he did! He would run up behind them and herd them toward me so I could catch them and put them back in their run. We made a good team! I was really proud of him and I think he enjoyed himself too.

▪WEDNESDAY SECOTAN MARKET TOMORROW (Wednesday) from 10-1. We will have our full market trailer with us. NO PRE ORDERS NECCESSARY. So come out and stock up on our delicious meats, chicken, beef, pork, BEEF MEAT STICKS and eggs.

▪SATURDAY SECOTAN MARKET this Saturday from 8-noon. NO PRE ORDERS NECCESSARY. We will have our full market trailer with us. Our Pasture Raised Meats, chicken, beef, pork, BEEF MEAT STICKS and eggs. See you soon!

Chicken Soup

Here is a standby recipie that I use to make good old fashioned Chicken Soup. This soup is deliciously warming to your insides and is just the thing for warding off those cold and flu bugs. I put the following ingredients into a 2.5 gallon pot and cover with water.

▪One bag of Heavenly Portion Chicken Necks, Backs and Breast bones, (OR 2 packs of Leg Quarters OR 1 Whole Chicken.)

▪Two spashs of Apple cider vinegar. (The vinegar draws the nutrients from the bones.)

▪2 onions, chopped

▪3 cloves of garlic

▪3 T of sea salt

▪1\2 teaspoon of cayenne pepper.

▪a 4 inch piece of ginger, grated (Don’t skip the ginger! This really makes the soup)

Simmer, covered, for at least 6-8 hours. A little film will form when it first starts boiling, skim this from the top. When finished, strain broth and place back in the pot. After chicken cools, remove the meat from the bones and place in the broth.

In a separate pot place:

4-6 potatoes, peeled and cubed

4 carrots, peeled and cubed

2 squash, cubed.

2 zucchini, cubed

Add water until covered and then boil until fork tender. Add veggies and veggie broth to the pot of broth. Add chicken and bring to a boil. You can add noodles if desired. Enjoy!

July 16th Newsletter

July 16th – News from the Farm:
In the past couple weeks we’ve gotten some new pigs! We have them set up in the woods and they are in hog heaven. They have a nice mud hole to be able to cool off in during this heat and plenty of shade from the trees overhead. They enjoy being able to root around for insects and all around being able to live life as pigs were designed to do; outdoors.


Have you tried our new product yet? Delicious Beef Meat Sticks made with our very own Pasture Raised Beef! No nitrites, nitrates or preservatives, and they’re super delicious! Come out to the Secotan Market Wednesday or Saturday (or both!) and check them out!
